Chef André Chiang Returns with New Fine Dining Restaurant at Raffles Hotel Singapore

Culinary icon Chef André Chiang is set to make his grand return to Singapore’s gastronomic scene with a brand-new restaurant concept, launching in late 2025 at the iconic Raffles Hotel Singapore.

This comes after a series of meaningful collaborations between the Taiwanese-born chef and the historic hotel, including a well-received two-week takeover at the now-closed La Dame de Pic, and the launch of his 200-page book Fragments of Time as part of the Raffles Writer’s Residency programme.

A Natural Partnership

Described by both parties as a partnership grounded in mutual respect and artistic synergy, the upcoming restaurant will serve as a signature dining destination located in the neo-Renaissance Main Building of Raffles Hotel.

Although the name and menu concept remain under wraps, we know the restaurant will focus on creating “a social and convivial space where guests are fully immersed in the dining experience.” Expect a fine-dining experience shaped by André’s renowned culinary philosophy, though the chef himself will not helm the kitchen directly.

“Singapore and Raffles Hotel have always been special to me… I’m going to present a restaurant that’s deeply personal to me, for Singapore, in a setting where I’ve been deeply inspired,” shared Chef André.

A New Era for Chef André

The restaurant marks Chef André’s first major fine-dining project since stepping away from the kitchen frontline. In 2024, he announced the closure of his award-winning Taipei restaurant RAW, transitioning the venue into a culinary incubator for the next generation of Taiwanese chefs.

Singapore diners may have recently seen a more casual side of Chef André with his hotpot venture Bon Broth, developed with local group Surrey Hills Holdings. However, this new concept at Raffles signals a return to his more refined roots.

Where Will It Be?

While the official location hasn’t been confirmed, there’s strong speculation it will be housed in the former La Dame de Pic space—currently an extension of the hotel’s Tea Lounge and notably where Chef André’s previous pop-up was held.
