Singapore's restaurant scene has welcomed back one of its most thoughtful dining destinations. Kausmo, the sustainability-focused sister concept of the acclaimed Nouri on Amoy Street, has quietly relaunched with a revamped tasting menu that pushes its signature cross-cultural philosophy further than ever before.

For those unfamiliar, Kausmo — which means "cosmos" in an old Latin root — earned its reputation not through spectacle but through rigour. Chef Ivan Brehm and his team built the concept around the idea of "crossroads cuisine," using Singapore's position as a meeting point of global trade routes as the philosophical backbone for every dish on the plate.

The relaunched menu spans eight courses and leans heavily into fermentation and preservation techniques. Expect a koji-aged wagyu paired with a broth reduced from banana blossom scraps, and a dessert built around tamarind caramel and coconut curd that draws from both South Indian and Southeast Asian traditions. The kitchen continues its zero-waste commitment — produce offcuts feed the fermentation larder, and the menu shifts with what's seasonal and local.

The wine programme has been refreshed by sommelier Romain Lignel, who has introduced a tighter list of natural and low-intervention bottles from producers in Georgia, Slovenia, and the Jura. There's also a non-alcoholic pairing available — a rotating selection of house-made kombuchas, shrubs, and cold-pressed juices that are designed with as much intention as the food.

The dining room itself has been subtly redesigned. The seating is more intimate now — just 24 covers — with warm timber accents and a central kitchen pass that lets diners watch the final stages of plating in real time. It's the kind of quiet confidence that comes from a team that knows exactly what it wants to say.

Kausmo is open for dinner from Tuesday to Saturday. Reservations are required, and the team recommends booking at least two weeks in advance given the limited covers. The eight-course tasting menu is priced at $248 per person, with the wine pairing at an additional $128 and the non-alcoholic pairing at $88.
